Makes enough for a 20 x 15 cm Flapjack tin – 12-16 bars
320g (gluten free) Organic Rolled Oats
80g Oat or Gluten Free Flour
220-250g Organic Vegan margarine or butter
50g Organic Raw cashew nuts
100-150g Organic Dried dates
100-150g Organic Ready to eat dried Figs
100-150ml Agave Syrup
2tsp ground Organic cinnamon
pinch of (pink) salt to taste
Preheat the oven to 180 degrees C and grease a flapjack tin.
Using a large saucepan melt the fat gently and add Agave. While this is melting, chop dates, figs and cashews together finely or with a food processor. place all the dry ingredients (oats, flour, cinnamon, salt, fruit and nut mix) into the fat/agave mixture and make sure it is well mixed. Spread into the flapjack tin an press down firmly. Bake in the oven for 20-30 minutes until golden. Slice into desired number slices and allow to cool in the tin – they will firm up further on cooling.
